When to Order

We have butcher dates year round, so when to order depends on what works for you time wise and whether you would like a smaller or larger animal. Fall and Spring butcher spots are subject to availability. Go for a fall bison for a relatively smaller total amount of meat or a spring bison for a larger amount of meat. We can deliver orders to certain locations in Oregon, Washington and Idaho, or you can avoid a delivery fee (variable by location) by picking up your share here at the ranch.

How the math works

Animals and costs vary by weight. Buying a bison share is a little different from how you normally purchase meat. Read below to understand how costs are calculated based on the specific weight of the animal your share comes from.

What you’re buying
We sell our animals “on the hoof,” which means we technically sell them when they are still alive. You, the customer, then own a portion of the actual animal—a quarter, half, or whole—once we receive your deposit. You then select how your portion gets butchered.

Calculating cost for the animal
The total price for your bison share is determined by multiplying your share’s “hanging weight” by the price per pound. Hanging weight refers to the weight of the animal after slaughter when the hide, head, legs, and entrails have been removed but no butchery has happened. You will receive your hanging weight several days after your scheduled butcher date.

Calculating cost for cut and wrap
Our bison are harvested on the ranch by a custom exempt mobile slaughter and then transported to our local custom exempt meat shop for processing. Your cost for cutting and wrapping is calculated on a per pound basis: the hanging weight of your share x cut and wrap price per pound = your cost.

Add together the cost of the animal and the cost of cut and wrap to determine your total cost. Note: the cut and wrap fee is set by the butcher and subject to change.

Calculating how much meat to expect from your share

Boneless cutting typically yields a meat percentage in the high 60s to low 70s. Your order will naturally have a higher weight if you choose to receive offal and/or bones. Many factors other than removing bones play into the final yield—such as shrinkage from hanging in the cooler, moisture lost as the carcass is cut down into portions, and disposal of inedible or undesirable pieces.

  • Your total price is determined by the animal's hanging weight and price per pound for cutting and wrapping.

    Cut and wrap — $1.10 per pound

    Quarter- $6.90 per pound ($8.00. per pound including cutting & wrapping)

    Half- $6.40 per pound ($7.50 per pound including cutting & wrapping)

    Whole- $6.15 per pound ($7.25 per pound including cutting & wrapping)

  • A non-refundable deposit, as detailed below, is required upon placing your order. This reserves/purchases your live animal. Once the bison is processed, we will contact you with the remaining balance for your order. Cash, check, Venmo, and card are all acceptable payment options. Payment by card incurs a 3.6% transaction fee.

    As the calendar moves later into spring, average animal sizes get bigger—which means you get more and spend more.

  • The bare minimum requirements for storing a bulk share of bison are as follows:

    Quarter: 4 cubic ft. (2 banana boxes)

    Half: 6 cubic ft. (3 banana boxes)

    Whole: 12 cubic ft. (6 banana boxes)

    You will need a little more space if you get bones and/or offal

  • Q. Can I have my share custom cut to my specifications?

    A. For half and whole-animal shares, yes, you absolutely can. For quarters, we kindly require that you select one of the four cutting packages detailed above. To place custom cutting instructions, you will speak directly with the butcher after you have reserved your share through Stangel Bison Ranch. Please note: Custom cutting orders may incur additional cutting fees from the butcher.

    Q. If I order a quarter share, do I miss out on any cuts?

    A. We do a split quarter, which means we match you with someone else that has your same cut package and split a half between you two. This allows you to get cuts from the whole half vs the front or back quarter. However, as there is only one tri-tip on each half of the animal, quarter shares receive either a tri-tip or flat iron (cuts which are comparable in size and quality).

    Q. How much meat should I expect based on the weight of a bison?

    A. Many factors other than removing bones play into the final yield—such as shrinkage from hanging in the cooler, moisture lost as the carcass is cut down into portions, and disposal of inedible or undesirable pieces.

    Q. What happens to the good bits of meat that get cut away during butchery?

    A. All trim meat (excess bits cut away in the process) and cuts not selected in your cutting package are ground for burger.

    Q. I’m used to having choices with my round steak. Is that possible here?

    A. Yes, all orders with round steak (options A, B, and C) can specify having their round steak ground, cubed, plain, or as roasts.

    Q. What happens with the bones? Can I keep some for soups or my dogs? Do they cost extra?

    A. It’s your share of the bison, so you are welcome to the bones if you want them. Soup and dog bones are available to you—simply specify when you order. No, bones do not cost extra.

    Q. Can I keep the offal (organs and other non-traditional cuts)?

    Yes. Tongue, heart, liver, and oxtail are available for additional packaging fee set by the butcher.
